A High End Sustainable Restaurant in Kits? Oh My!

 

A restaurant starting off with a focus on sustainability, instead of using a few ingredients from local farms to distract from it’s otherwise mass ordered ingredient list?  Could it be real? Maybe in Kits.
In my often by weekly cruising of Craig’s List postings, I like to look at everything from $3000 apt’s for rent to concert tickets, I noticed something curious when I searched Kitsilano. As I live in Kits this is a general search I like to do in Jobs, Apartments, stuff for sales. There was a post for a new “white tablecloth” restaurant at the seemingly cursed previous location of, among others, Mon Bella just off Burrard on W1st. The posting was looking for staff with “Knowledge and passion for fine food & wine plus an understanding of sustainability and the local organic food movement an asset.
Being curious, and admittedly nosey, I tried searching Scout, googling various variations of the address and theme, but to no avail. Then, as I live quite close to the location, a wandered by a couple of times to see if there was any movement inside; I did see a light on in the kitchen a few days ago, but today all lights were out and there was a paper leaning against the door. (You know you’re in Kits when it’s 4:30 and no one has bothers to steal it.)

What I will say is that it would be great if this weren’t just another passing ship, but instead part of a real movement towards caring about where our food comes from. Preferably at a price point slightly below Bishop’s, as I’d like to actually be able to try it out. I’ll be keeping an eye out, and I guess we’ll all just have to wait and see.
